Preparation

Because Wagyu Brisket is more marbled that even Prime-grade traditional beef, there are some steps to take in smoking that will help yield better results. Consider the following tips:

  • Leave extra time to help render the additional fat, and then boost the finishing temp up a bit (~213º - 217º) at the end.
  • Use a meat probe to keep an eye on your temps.
  • Trim anything over 1/4" of fat to avoid the final product from being too fatty.
