Preparation
The ribeye is very flexible in the way it can be prepared, but most recommend grilling, in a skillet, sous vide, or reverse searing on a smoker or in an oven. That said, RANGE recommends cooking ribeye steaks to medium-rare (130-135ºF internal temp) and reverse searing them on a smoker or grill for the best results. Also, with this added thickness, consider a reverse sear following by a very hot sear to finish.
